I remember a time when coffee was a simply a drink. Now it seems to be mixed in everything from ice cream to protein bars, it’s even in shampoo. However, for a classic coffee lover like me, the best non-cup of Joe route for that coffee taste has to be in a cookie (bonus points that I can dunk this cookie in my morning cup).

The reason is actually very simple; coffee and crunch just works.

An always popular combo is coffee and biscotti and in this double-baked cookie, it’s spot-on. If you’re after a great dunking cookie that’s lightly sweet and perfect any time of year, this recipe is for you.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup almond flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons instant coffee granules
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped almonds or hazelnuts
  1. Heat the oven to 350°F. Line a baking sheet with parchment paper.
  2. Whisk flour, sugar, almond flour, baking powder, salt, and instant coffee granules in a large bowl until evenly mixed.
  3. In a medium bowl, beat the eggs with the vanilla using a fork or small whisk.
  4. Pour the egg mixture into the dry ingredients a little at a time, stirring with a wooden spoon or spatula until a dough forms.
  5. Fold in the chopped almonds or hazelnuts if you’re using them.
  6. Turn the dough out on to a lightly floured surface and divide into two equal pieces.
  7. Shape each into a log about 10 inches long and 2 inches wide. Place both logs on the baking sheet with space between them.
  8. Bake 25 minutes, until the logs feel firm and look lightly golden.
  9. Let the logs cool for about 5 minutes, then reduce the oven to 325°F.
  10. Slice each log diagonally into 1/2-inch pieces with a serrated knife and arrange the slices cut-side down on the baking sheet.
  11. Bake 10 to 15 minutes more, turning halfway through, until golden and crunchy.
  12. Cool completely on a wire rack. They will crisp up more as they cool. Serve when cool.
