Cooking Steps

  1. Evenly space your tortilla chips across a baking tray.
  2. Cover the tortilla chips with 1/2 cup of cheese (or more, if preferred).
  3. Broil under medium heat until the cheese melts.
  4. Over medium heat, add your canola oil to a pan.
  5. Add your onion, garlic, zucchini, corn, jalapenos, salt, cumin, chili powder, and black beans to the pan.
  6. Cook and mix your veggies to taste.
