Zuppa Inglese is an old Italian dessert of layered custard, chocolate, with a little liqueur-soaked flavor. This recipe takes that idea and runs with it. Think chocolate cookie rounds with soft vanilla custard in the middle. Delicious.
The great thing about this recipe is that it can take store brought custard and make it look part of a homemade dessert. Buying from the store is also a big time-saver as it cuts the often-fussy process of homemade custard out.

Zuppa Inglese Cookies Ingredients
- 1 cup of all-purpose flour (125g)
- 1/4 cup of unsweetened cocoa powder (25g)
- 1/2 teaspoon of baking powder (2.5g)
- 1/4 teaspoon of salt (1.25g)
- 1/2 cup of unsalted butter, softened (115g)
- 1/3 cup of granulated sugar (67g)
- 1/3 cup of brown sugar, packed (67g)
- 1 large egg
- 1 teaspoon of vanilla extract (5ml)
- 1 tablespoon of coffee liqueur (15ml)
- 1/2 cup of prepared vanilla custard (120ml)
- 1/2 cup of semi-sweet chocolate chips (90g)
Zuppa Inglese Cookies Instructions
- Preheat your oven to 350°F (175°C).
- Whisk flour, cocoa powder, baking powder, and salt in a medium bowl. Set it aside.
- Beat the softened butter with both sugars until creamy and smooth.
- Mix in the egg, vanilla, and coffee liqueur. Blend well.
- Add the dry ingredients gradually and mix until a smooth dough forms.
- Drop tablespoon-sized scoops onto a parchment-lined baking sheet, leaving about 2 inches between them.
- Bake 10 to 12 minutes, until the edges feel firm. Let it cool completely on a wire rack.
- Spread a spoonful of vanilla custard on the flat side of one cookie, then top with another to make a sandwich.
- Melt the chocolate chips in 30-second microwave bursts, stirring each time, until smooth.
- Drizzle or dip the sandwiches in the melted chocolate and let them set until the chocolate hardens.
- Serve when cooled.
