Strawberry Crepes Recipe Ingredients
- 4 large eggs
- 2 cups of milk
- 1 1/3 cups of all-purpose flour
- 1/4 of teaspoon salt
- 2 tablespoons of sugar
- 1 teaspoon of vanilla extract
- 1 1/2 teaspoons of vegetable oil
- 2 cups of strawberries, chopped
- 1/2 cup of sugar
- 8 ounces of cream cheese, softened
- 1/2 cup of powdered sugar
- 1/2 teaspoon of vanilla extract
- Whipped cream, for topping
- Extra sliced strawberries, for topping
- Extra powdered sugar, for dusting
Strawberry Crepes Recipe Instructions
- In a blender, add the eggs, milk, flour, salt, sugar, vanilla, and vegetable oil. Blend until smooth. This is the batter.
- Cover the batter and chill it in the fridge for about 1 hour. This helps the crepes cook better and keeps the texture soft.
- While the batter rests, mix the chopped strawberries with 1/2 cup sugar. Set them aside so they can release some juice.
- In a separate bowl, beat the softened cream cheese, powdered sugar, and vanilla until smooth.
- Fold the sweetened strawberries into the cream cheese mixture.
- Heat a nonstick skillet over medium heat and lightly grease it with cooking spray or a little oil.
- Pour about 1/4 cup batter into the pan. Tilt the pan so the batter spreads into a thin, even layer.
- Cook until the bottom is lightly golden, then flip and cook the other side. Repeat with the remaining batter.
- Spoon 2 tablespoons of strawberry cream cheese filling into each crepe and roll.
- Top with sliced strawberries, whipped cream, and a light dusting of powdered sugar.
