If you’re looking for a colorful and filling breakfast recipe, huevos divorciados should top your to-cook list. The recipe includes eggs, tortillas, creamy beans and salsas.
The name huevos divorciados means divorced eggs, and relates to how the fried sunny-side-up eggs are separated by the red and green salsas.
What makes this dish so fantastic is that it uses a lot easy to find store-bought ingredients, with very little fuss needed. The two salsas make it bright and gives each mouthful a chance to have a different flavor combination. Check out the ingredients and cooking steps below.
Huevos Divorciados Ingredients
- 2 eggs
- 2 tablespoons of vegetable oil
- 2 corn tortillas
- 1/2 cup of red salsa
- 1/2 cup of green salsa
- 1/4 cup of refried beans
- Salt to taste
- Black pepper to taste
- Crumbled cotija cheese (optional)
- Chopped cilantro (optional)
Huevos Divorciados Instructions
- Place the refried beans in a small pot and warm them over low heat. Stir now and then until they are hot all the way through.
- Add 1 tablespoon of vegetable oil to a frying pan and heat it over medium-high heat. Fry the corn tortillas for about 30 seconds per side, until they are crisp and golden. Transfer them to a paper towel-lined plate to drain.
- Using the same pan, lower the heat to medium and pour in the remaining tablespoon of oil. Crack the eggs into the pan carefully so the yolks stay whole. Season with salt and black pepper.
- Cook the eggs for about 4 minutes, until the whites are set and the yolks are still soft. If you want firmer yolks, cook them a little longer or flip them.
- Set a fried tortilla on each plate and spread a layer of warm refried beans over each one.
- Place two fried eggs on top of the beans on each tortilla.
- Spoon the red salsa over one egg on each plate and the green salsa over the other egg, keeping the sauces separate so they do not run together.
- Add crumbled cotija cheese and chopped cilantro on top if you like, then serve right away.
