Instant Pot Chicken Piccata Ingredients

  • 4 boneless and skinless chicken breasts
  • 1/4 cup of all-purpose flour
  • 1 tsp of kosher salt
  • 1/2 tsp of black pepper
  • 2 tbsp of olive oil
  • 2 tbsp of unsalted butter (divided)
  • 1 cup of low-sodium chicken broth
  • 1/3 cup of fresh lemon juice (2 lemons)
  • 1/4 cup of brined capers (drained)
  • 3 garlic cloves (minced)
  • 1/4 cup of fresh parsley (chopped)

Instant Pot Chicken Piccata Instructions

  1. Pat the chicken dry to remove moisture.
  2. Mix flour, salt, and pepper in a shallow dish, then dredge across each breast and shake off the extra.
  3. Press Sauté on the Instant Pot and add 1 tbsp of oil, 1 tbsp butter, then brown the chicken for 3 to 4 minutes per side until golden. Transfer the chicken to a plate.
  4. Pour in the broth and scrape the bottom well with a wooden spoon to lift the browned bits.
  5. Stir in lemon juice, capers, and garlic.
  6. Slide the chicken back into the liquid, overlapping is fine. Lock the lid and set the valve to sealing.
  7. Cook on High Pressure for 5 minutes. Let it naturally release for 5 minutes, then quick-release what’s left.
  8. Move the chicken to a serving platter.
  9. Switch back to Sauté and whisk in the remaining 1 tbsp butter until the sauce turns glossy, about 1 to 2 minutes.
  10. Spoon sauce over the chicken, sprinkle with parsley, and serve right away over pasta or mashed potatoes.
