Chicken Parmesan is easily one of the most favorite dishes amongst friends and family. I think there is a clear reason it shows up in so many places. It’s comfort food, familiar, and everyone loves melted bubbling cheese.

This is also one of the dishes that I never knew that my Instant Pot could simplify without sacrificing the texture I have ground to love; crispy breading surrounding the most tender chicken. Better yet, from a budget angle, this recipe can serve four with ease and many of the ingredients you’ll find already in your cupboard.

Instant Pot Chicken Parmesan Ingredients

  • 4 boneless, skinless chicken breasts (6-8 oz each)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1.5 cups Italian-seasoned breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 3 tbsp olive oil (divided)
  • 1.5 cups water
  • 8 oz dried pasta (like penne or spaghetti)
  • 24 oz marinara sauce (jarred or homemade)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup fresh basil

Instant Pot Chicken Parmesan Instructions

  1. Pat the chicken dry with paper towels.
  2. Then place chicken between plastic wrap and pound to about 1/2-inch thick.
  3. In one bowl, add flour mixed with garlic powder, paprika, salt, and pepper.
  4. In a second bowl, add whisked eggs.
  5. In a third bowl add the breadcrumbs mixed with Parmesan.
  6. Coat each breast in flour and shake off the extra.
  7. Dip in egg, then press into breadcrumbs until well covered.
  8. Set each covered breast aside.
  9. Set Instant Pot to Sauté (Normal). Add 2 tbsp oil and brown 2 breasts for 3–4 minutes per side, just until golden. Not cooked through and then remove.
  10. Then repeat with remaining oil and chicken. Turn off the pot.
  11. Pour water into the pot and scrape up the browned bits. Add pasta and marinara, do not stir. Lay the chicken on top in a single layer.
  12. Lock the lid and set valve to Sealing. Pressure Cook on High for 5 minutes. Quick release when done.
  13. Move chicken to a foil-lined baking sheet. Top with mozzarella. Broil 2–3 minutes at 500°F until bubbly and lightly golden. Stay close.
  14. Stir the pasta to combine with the sauce.
  15. Serve the pasta and set chicken on top.
  16. Finish with basil and extra Parmesan.
