Gyro Greek Sandwich

I stopped at the Greek festival in Windham, NY this weekend and kept going back to the food tents. For me the gyros were the best part. Warm pita, meat carved right in front of me, and a spoonful of tzatziki sauce on top. It was simple but it really hit the spot.

When I got home, I wanted to make one myself.

This Gyro Greek Sandwich recipe is my version. No fancy tricks, just the basics that make it taste like what I had at the festival. Easy enough for a weeknight dinner and a good way to change things up at the table.

Ingredients

  • 1 lb ground lamb or beef (or a mix)
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 4 medium pita breads
  • 1 cup diced tomatoes
  • 1/2 cup thinly sliced red onion
  • For Tzatziki Sauce:
  • 1 cup Greek yogurt
  • 1/2 cup grated cucumber (squeezed dry)
  • 1 clove garlic (minced)
  • 1 tbsp lemon juice
  • 1 tsp olive oil
  • 1/2 tsp dried dill
  • 1/4 tsp salt

Instructions

  1. Grate cucumber and squeeze out excess moisture using paper towels. In a bowl, combine yogurt, cucumber, garlic, lemon juice, olive oil, dill, and salt. Refrigerate until ready to use.
  2. In a bowl, mix ground meat with garlic powder, oregano, cumin, paprika, salt, and pepper. Shape into 4 oval-shaped patties (like small meatloaves) for even cooking.
  3. Heat olive oil in a skillet over medium-high heat. Cook patties for 4-5 minutes per side or until internal temperature reaches 160°F. Let rest 3 minutes, then slice thinly. Tip: Avoid overcrowding the pan to ensure a good sear.
  4. Wrap pitas in aluminum foil and warm in a 300°F oven for 5 minutes, or heat in a dry skillet for 30 seconds per side. Tip: Slightly toasting prevents tearing.
  5. Spread tzatziki on each pita. Add sliced meat, tomatoes, and onions. Fold and wrap the bottom in parchment paper for easy handling.
