If you haven’t cooked shrimp before, the main thing to know before you start is that it cooks way faster than you may think.
As I’m from the East Coast, I’ve learned to keep a seafood recipe that’s easy to make on standby, because visitors always pop in and expect the taste of the sea (for some odd reason).
It’s worth noting, the lemon in this marinade works quickly, so you only want a short soak or the shrimp can start to firm up in a quite horrible way. Don’t go over 10 minutes and once the grill’s hot, the rest moves fast. Literally, blink-and-it’s-pink.

Grilled Shrimp Skewers Ingredients
- 1.5 lbs of large shrimp (peeled and deveined, tails on)
- 3 tbsp of olive oil
- 3 garlic cloves (minced)
- 1 lemon (zested and juiced)
- 1 tsp of smoked paprika
- 1 tsp of garlic powder
- 1/2 tsp of cayenne pepper (optional)
- 1 tsp of salt
- 1/2 tsp of black pepper
- 1/4 cup of chopped fresh parsley (garnish)
- Wooden or metal skewers
Grilled Shrimp Skewers Instructions
- Wooden skewers burn easily, so soak them in water for 30 minutes before you start. If you’re using metal skewers you can skip this tip.
- In a bowl, whisk olive oil, garlic, lemon zest, lemon juice, smoked paprika, garlic powder, cayenne if you’re using it, salt, and pepper until it looks blended.
- Add the shrimp and toss until everything’s coated. Let it sit for 10 minutes, not longer, since citrus can start changing the texture.
- Preheat the grill to medium-high heat, about 375–400°F.
- Thread 4 to 5 shrimp onto each skewer, leaving a small gap between pieces so heat can reach the sides.
- Grill for 3 minutes per side, until the shrimp turn pink and opaque.
- Pull them as soon as they’re done, overcooked shrimp has a rubbery texture.
- Sprinkle with chopped parsley and serve right away.
