  • 4 bone-in pork chops (1/2 inch thick)
  • 1.5 cups all-purpose flour (divided)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1.5 tsp kosher salt (divided)
  • 1 tsp black pepper (divided)
  • 2 large eggs
  • 1/4 cup whole milk
  • 1.5 cups vegetable oil (for frying)
  • 2 tbsp unsalted butter
  • 2 cups whole milk (for gravy)
  • 1/4 tsp cayenne pepper (optional)

Fried Pork Chops with Cream Gravy Instructions

  1. Pat the pork chops dry. The seasoning sticks better that way, and the crust browns more evenly.
  2. In a shallow dish, mix flour, salt, pepper, garlic powder, paprika, onion powder, and thyme if you’re using it.
  3. Dredge each chop and press so the flour coats both sides well.
  4. Heat the oil in a large skillet over medium-high heat. When it shimmers, add the chops. Fry 4 to 5 minutes per side, until golden and cooked through.
  5. Move them to a rack to rest.
  6. Pour off most of the oil, but keep about 2 tablespoons of drippings in the skillet. Turn heat to medium.
  7. Whisk in 2 tablespoons flour and cook for about 1 minute, just until it turns slightly golden and smells toasted.
