If you love the taste of lasagna, these lasagna cups are fantastic for busy weeknights. Think of them like mini-lasagnas. The only real difference is that the pasta is swapped out for wonton wrappers. However, this swap gives each cup a crunch, while still serving up the classic lasagna flavors of beef, cheese, and marinara sauce.

Lasagna Cups Recipe Ingredients

  • Nonstick cooking spray
  • 1 pound of ground beef
  • 1 24-ounce jar of marinara sauce or spaghetti sauce
  • 8 ounces of part-skim ricotta cheese
  • 1 large egg
  • ¼ teaspoon of garlic powder
  • ½ teaspoon of Italian seasoning
  • 2 tablespoons of grated Parmesan cheese
  • ½ cup shredded of mozzarella cheese, divided
  • 24 wonton wrappers
  • Chopped fresh basil or parsley, for garnish

Lasagna Cups Recipe Instructions

  1. Preheat the oven to 350°F.
  2. Spray a 12-cup muffin tin with nonstick cooking spray.
  3. Add the ground beef to a skillet over medium-high heat.
  4. Cook until browned, breaking it apart as it cooks. Once browned, drain the fat.
  5. Stir in the marinara sauce and ¼ cup mozzarella cheese. Once mixed in, remove the skillet from the heat and let it cool slightly.
  6. In a bowl, mix the ricotta, egg, garlic powder, Italian seasoning, and Parmesan until smooth.
  7. Press 2 wonton wrappers into each muffin cup, overlapping them so they form a small bowl shape.
  8. Add 2 tablespoons of meat sauce to each cup. Add about 1 tablespoon of ricotta mixture on top.
  9. Add a little more meat sauce, then sprinkle the remaining ¼ cup mozzarella over the tops.
  10. Bake for 15 minutes, or until the wonton edges are lightly golden and the cheese is melted.
  11. Let the cups cool for 5 minutes before removing them from the pan. This helps them hold their shape.
  12. Serve with sides and garnish.
