Whenever we make these almost biscotti slices, they’re gone fast.

They’re the perfect quick bite with an early morning cup of coffee. They have a little crispiness and a taste that truly feels perfect at breakfast (but they’re great any time of the day too).

We’ve baked lots of these over the years, and a quick tip for presentation, is to slice on a firm angle and give the slices a second bake to dry out properly if you want them cookie-like. It’s worth the extra minutes.

Almond Biscotti Slices Ingredients

  • 1 cup of granulated sugar (200g)
  • 1/2 cup of unsalted butter, softened (115g)
  • 1 teaspoon of vanilla extract
  • 3 large eggs
  • 2 1/4 cups of all-purpose flour (280g)
  • 1 1/2 teaspoons of baking powder
  • 1/4 teaspoon salt
  • 1 cup of whole almonds, toasted and chopped (140g)

Almond Biscotti Slices Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the sugar and butter with an electric mixer on medium speed until light and fluffy. This usually takes about 3 minutes.
  3. Beat in the vanilla, then add the eggs one at a time, mixing well after each.
  4. In a separate bowl, mix the flour, baking powder, and salt.
  5. Add the dry ingredients to the wet ingredients slowly, mixing on low just until the dough comes together.
  6. Fold in the toasted chopped almonds.
  7. Split the dough in half.
  8. Shape each portion into a log about 12 inches long and 2 inches wide on the baking sheet, leave space between the logs for spreading.
  9. Bake for 25 minutes, until the logs turn light golden.
  10. Let them cool for about 10 minutes so they’re easier to slice.
  11. Use a sharp knife to cut diagonal 1/2-inch slices.
  12. Set the slices cut-side down on the baking sheet.
  13. Bake again for 10 minutes per side, until golden and crisp.
  14. Once complete, let them completely cool on a wire rack.
