Whenever we make these almost biscotti slices, they’re gone fast.
They’re the perfect quick bite with an early morning cup of coffee. They have a little crispiness and a taste that truly feels perfect at breakfast (but they’re great any time of the day too).
We’ve baked lots of these over the years, and a quick tip for presentation, is to slice on a firm angle and give the slices a second bake to dry out properly if you want them cookie-like. It’s worth the extra minutes.

Almond Biscotti Slices Ingredients
- 1 cup of granulated sugar (200g)
- 1/2 cup of unsalted butter, softened (115g)
- 1 teaspoon of vanilla extract
- 3 large eggs
- 2 1/4 cups of all-purpose flour (280g)
- 1 1/2 teaspoons of baking powder
- 1/4 teaspoon salt
- 1 cup of whole almonds, toasted and chopped (140g)
Almond Biscotti Slices Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream the sugar and butter with an electric mixer on medium speed until light and fluffy. This usually takes about 3 minutes.
- Beat in the vanilla, then add the eggs one at a time, mixing well after each.
- In a separate bowl, mix the flour, baking powder, and salt.
- Add the dry ingredients to the wet ingredients slowly, mixing on low just until the dough comes together.
- Fold in the toasted chopped almonds.
- Split the dough in half.
- Shape each portion into a log about 12 inches long and 2 inches wide on the baking sheet, leave space between the logs for spreading.
- Bake for 25 minutes, until the logs turn light golden.
- Let them cool for about 10 minutes so they’re easier to slice.
- Use a sharp knife to cut diagonal 1/2-inch slices.
- Set the slices cut-side down on the baking sheet.
- Bake again for 10 minutes per side, until golden and crisp.
- Once complete, let them completely cool on a wire rack.
