A lot of people don’t consider the humble onion a standout flavor. Too often it’s thought of as an extra ingredient bundled into a recipe for depth or crunch. This onion frittata is different.

The final dish is warm, satisfying, and packed with a rich, savory flavour that’ll fit brunch, lunch and even light dinners. All you need to do is cook down the onions until they’re soft and golden, add Parmesan and eggs, and you’re good to go.

Onion Frittata Ingredients

  • 6 large eggs
  • 2 medium onions, thinly sliced
  • 2 tablespoons olive oil
  • 1/4 cup grated Parmesan cheese
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1 tablespoon chopped fresh parsley (optional)

Onion Frittata Instructions

  1. Take out a good 10-inch non-stick skillet, as that will work well for this frittata.
  2. Thinly slice the onions, trying to keep the slices as even as you can.
  3. Set the skillet over medium heat and add the olive oil. Let the oil warm up.
  4. Add the sliced onions to the skillet. Stir them from time to time and cook for about 10 minutes, until they become soft and golden brown.
  5. While the onions cook, crack the eggs into a bowl and beat them with a fork or whisk until mixed.
  6. Stir the Parmesan cheese into the eggs, then season with salt and freshly ground black pepper. Mix everything together well.
  7. When the onions are ready, lower the heat and pour the egg mixture into the skillet over the onions. Keep the heat low so the eggs cook gently.
  8. Let the frittata cook for 10 minutes, until the edges are set but the top still looks a little soft.
  9. Preheat the broiler, or use an oven set to 350°F, to finish the top. Place the skillet under the broiler or in the oven for a couple of minutes, just until the eggs are fully set and lightly golden. Watch it closely.
  10. Remove the skillet from the heat and let the frittata rest briefly. Sprinkle with fresh parsley if using.
  11. Cut into wedges and serve warm.
