Huevos Rancheros Ingredients

  • 4 corn tortillas
  • 2 tablespoons of vegetable oil
  • 1 cup of canned black or red beans, drained and rinsed
  • 4 large eggs
  • 1 cup of tomato salsa
  • 1 avocado, sliced
  • 1/4 cup of crumbled feta cheese
  • 2 tablespoons of chopped fresh cilantro
  • Salt and pepper to taste
  • 1 lime, cut into wedges
  • Slices of jalapeños for heat (optional).

Huevos Rancheros Instructions

  1. Set your oven to 200°F so the tortillas can stay warm while you prepare the rest of the dish.
  2. Heat 1 tablespoon of vegetable oil in a nonstick skillet over medium-high heat.
  3. Fry each corn tortilla for 1 minute on each side, until lightly golden and to add a little crisp.
  4. Move the cooked tortillas to a baking sheet and place them in the oven to keep warm.
  5. Using the same skillet, add the remaining tablespoon of oil. Lower the heat to medium and add the beans.
  6. Cook the beans until they are heated through, then season them with salt and pepper. Keep them warm over a low heat.
  7. In another nonstick skillet, cook the eggs sunny-side up. A soft yolk is the traditional choice for this dish but cook them however you prefer.
  8. To serve, place two warm tortillas on each plate.
  9. Spoon the beans over the tortillas, place one egg on each tortilla, and add tomato salsa over the top.
  10. Finish with avocado slices, crumbled feta cheese, chopped fresh cilantro, and jalapeños slices (optional).
  11. Serve with lime wedges on the side.
