Carne asada is a classic Mexican dish that can deliver big flavor without a lot of complicated steps.

All you need to do is mix lime juice, garlic, soy sauce, and spices into a marinade for the steak. One those flavors are soaked up, grill until juicy and tender. It’s a simple recipe for a protein, one that can be used in many ways.

Carne Asada Ingredients

  • 2 pounds of flank or skirt steak
  • 1/4 cup of olive oil
  • 1/4 cup of soy sauce
  • 1/4 cup of lime juice (about 2-3 limes)
  • 3 cloves of garlic, minced
  • 1 teaspoon of ground cumin
  • 1 teaspoon of dried oregano
  • 1/4 teaspoon of black pepper
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of crushed red pepper flakes
  • 2 tablespoons of fresh cilantro, chopped

Carne Asada Instructions

  1. In a large bowl, whisk together the olive oil, soy sauce, lime juice, minced garlic, cumin, oregano, black pepper, salt, and crushed red pepper flakes until everything is well mixed.
  2. Place the flank or skirt steak in a large resealable plastic bag or shallow dish. Pour the marinade over the steak and make sure it is coated all over. Seal the bag or cover the dish tightly.
  3. Put the steak in the refrigerator and let it marinate for at least 1 hour. For deeper flavor, leave it overnight.
  4. Heat your grill to high, about 450°F. If you are using a grill pan indoors, place it over high heat until it is very hot.
  5. Take the steak out of the marinade and let any extra drip off. Throw away the used marinade.
  6. Set the steak on the hot grill and cook for 8 minutes per side for medium-rare, or adjust the time to suit how done you want it.
  7. Move the cooked steak to a cutting board and let it rest for 5 minutes so the juices can settle back into the meat.
  8. Slice the steak thinly against the grain to keep it tender.
  9. Sprinkle the chopped cilantro over the top.
  10. Serve with tortillas, rice, beans, or a fresh salad.
