Brown Sugar Cashew Blondies Recipe Ingredients
- 1 cup of unsalted butter, softened
- 2 cups of packed light brown sugar
- 2 large eggs
- 1 tablespoon of vanilla extract
- 1 1/2 cups of all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon of salt
- 1 cup of roasted unsalted cashews, roughly chopped
- Nonstick cooking spray or extra butter, for greasing the pan
Brown Sugar Cashew Blondies Recipe Instructions
- Preheat the oven to 350°F and grease an 8-inch square baking pan. For easier lifting, line the pan with parchment paper and leave a little overhang on two sides.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, beat the softened butter and brown sugar until smooth and creamy.
- Add the eggs one at a time, mixing after each one and then stir in the vanilla extract.
- Add the dry ingredients to the wet ingredients. Mix the two just until no dry streaks remain.
- Fold in the chopped cashews.
- Spread the thick batter evenly into the prepared baking pan.
- Bake for 45 minutes, or until the top is golden brown and a toothpick inserted near the center comes out with moist crumbs. Start checking for this after around 35 minutes.
- Let the blondies cool fully in the pan before slicing. This helps them set and gives cleaner cuts.
