  • 2 large eggs

  • 1 1/2 cups of all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon of salt
  • 1 cup of roasted unsalted cashews, roughly chopped
  • Nonstick cooking spray or extra butter, for greasing the pan

  1. Preheat the oven to 350°F and grease an 8-inch square baking pan. For easier lifting, line the pan with parchment paper and leave a little overhang on two sides.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, beat the softened butter and brown sugar until smooth and creamy.
  4. Add the eggs one at a time, mixing after each one and then stir in the vanilla extract.
