  • 1 cup of almond butter
  • 1 cup of pitted dates
  • 1/2 cup of almond flour
  • 1/4 cup of honey
  • 1 teaspoon of vanilla extract
  • 1/4 teaspoon of salt
  • 1/2 teaspoon of baking powder

Almond Butter Date Bars Instructions

  1. Heat the oven to 350°F.
  2. Line an 8×8 inch baking dish with parchment paper, leave extra hanging over the sides for easy lifting.
  3. In a food processor, blend the dates, almond butter, honey, and vanilla until smooth and fully combined.
  4. In a mixing bowl, stir together almond flour, baking powder, and salt until evenly mixed.
  5. Add the dry mix to the food processor.
  6. Pulse until a cohesive dough forms. If it looks too dry, add 1 tablespoon of water and pulse again.
  7. Press the dough into the prepared baking dishes across an even layer. Smooth the top with a spatula, or your finger.

  10. Refrigerate for 15 minutes once cooled for easier slicing.
  11. Lift out using the parchment and slice into 16 bars.
