For days when I can’t bear to cook, but still need something filling, this cold noodle bowl hits the spot. The dressing is savory, the veggies are crunchy, and the whole thing feels restaurant-level with very little effort.
Ingredients
- 1 package soba noodles
- 1 cup shredded carrots
- 1 cucumber, julienned
- 1/2 red bell pepper, thinly sliced
- 2 scallions, chopped
- Sesame seeds, for garnish
Ingredients (for the dressing)
- 2 tablespoons soy sauce or tamari
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon honey or brown sugar

Instructions
