White Chili Chicken Ingredients

  • 1 tablespoon of olive oil
  • 1 medium yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 small jalapeño, seeded and finely chopped
  • 1 1/2 pounds of boneless, skinless chicken breasts, cut into bite-sized cubes
  • 1 teaspoon of ground cumin
  • 1/2 teaspoon of dried oregano
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 4 cups of low-sodium chicken broth
  • 2 cans of diced green chiles
  • 2 cans of white beans, drained and rinsed
  • 1 1/2 cups of corn, frozen or canned and drained
  • 4 ounces of cream cheese, softened and cubed
  • 1/2 cup of sour cream
  • 1 tablespoon of fresh lime juice
  • 2 green onions, thinly sliced

White Chili Chicken Instructions

  1. Heat the olive oil in a large pot over a medium heat.
  2. Add the onion and cook for 4 minutes, until softened.
  3. Next add the garlic and jalapeño. Continue to cook for a further 1 minute.
  4. Add the cubed chicken, cumin, oregano, salt, and black pepper.
  5. Cook the chicken for 6 minutes. Stir the contents of the pot frequently. Cook the chicken until the outside is no longer pink.
  6. Pour in the chicken broth and stir.
  7. Add the diced green chiles.
  8. Next add 1 can of white beans to a bowl and mash them with a fork.
  9. Add the mashed beans and the second can of whole beans to the pot.
  10. Add the corn to the pot.
  11. Bring the chili to a gentle simmer and cook for 18 minutes. Cook until the chicken is fully cooked and the broth has slightly thickened.
  12. At this point lower the heat and stir in the cream cheese. Cook and mix until the cheese is melted and the mixture is smooth.
  13. Stir in the sour cream and lime juice. Do not increase temperature at this point as the cream may separate at high temperature.
  14. Season to taste and add lime juice for freshness.
  15. Serve warm with any toppings you may like.
