What makes this a great option is the fact it’s lighter than traditional beef chili, but doesn’t skimp on flavor. The jalapeño and green chiles give it a surprising heat. Explore the ingredients and cooking steps below.
White Chili Chicken Ingredients
- 1 tablespoon of olive oil
- 1 medium yellow onion, finely diced
- 2 cloves garlic, minced
- 1 small jalapeño, seeded and finely chopped
- 1 1/2 pounds of boneless, skinless chicken breasts, cut into bite-sized cubes
- 1 teaspoon of ground cumin
- 1/2 teaspoon of dried oregano
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 4 cups of low-sodium chicken broth
- 2 cans of diced green chiles
- 2 cans of white beans, drained and rinsed
- 1 1/2 cups of corn, frozen or canned and drained
- 4 ounces of cream cheese, softened and cubed
- 1/2 cup of sour cream
- 1 tablespoon of fresh lime juice
- 2 green onions, thinly sliced
White Chili Chicken Instructions
- Heat the olive oil in a large pot over a medium heat.
- Add the onion and cook for 4 minutes, until softened.
- Next add the garlic and jalapeño. Continue to cook for a further 1 minute.
- Add the cubed chicken, cumin, oregano, salt, and black pepper.
- Cook the chicken for 6 minutes. Stir the contents of the pot frequently. Cook the chicken until the outside is no longer pink.
- Pour in the chicken broth and stir.
- Add the diced green chiles.
- Next add 1 can of white beans to a bowl and mash them with a fork.
- Add the mashed beans and the second can of whole beans to the pot.
- Add the corn to the pot.
- Bring the chili to a gentle simmer and cook for 18 minutes. Cook until the chicken is fully cooked and the broth has slightly thickened.
- At this point lower the heat and stir in the cream cheese. Cook and mix until the cheese is melted and the mixture is smooth.
- Stir in the sour cream and lime juice. Do not increase temperature at this point as the cream may separate at high temperature.
- Season to taste and add lime juice for freshness.
- Serve warm with any toppings you may like.
