This Greek-style dish cooks the mushrooms briefly, then lets them sit in a mix of olive oil, lemon, garlic, and herbs. The flavor gets better the longer it rests. That part is still a little surprising, how something so simple tastes more finished the longer you leave it. Plus, they can be served cold or at room temp. No fuss.

Greek-Style Marinated Mushrooms Ingredients
- 1 pound of mushrooms, cleaned and halved (450g)
- 2 tablespoons of olive oil (30ml)
- 1 shallot, finely chopped
- 2 cloves of garlic, minced
- 1/2 cup of dry white wine (120ml)
- 1/2 cup of tomato puree (120ml)
- 1/4 cup of lemon juice (60ml)
- 1 teaspoon of dried oregano (5ml)
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped (for garnish)
Greek-Style Marinated Mushrooms Instructions
- Heat 1 tablespoon of olive oil in a skillet over medium heat.
- Add the mushrooms and cook 8 minutes, until they soften and release their liquid.
- In a bowl, whisk the remaining olive oil with lemon juice, garlic, oregano, salt, and pepper.
- Add the warm mushrooms to the bowl and toss well so they absorb the marinade.
- Stir in parsley and any optional add-ins.
- Cover and refrigerate for at least 1 hour. Overnight is even better.
- Spoon some of the marinade over the top right before serving.
- Serve chilled or at room temperature.
