Greek-Style Marinated Mushrooms Ingredients

  • 1 pound of mushrooms, cleaned and halved (450g)
  • 2 tablespoons of olive oil (30ml)
  • 1 shallot, finely chopped
  • 2 cloves of garlic, minced
  • 1/2 cup of dry white wine (120ml)
  • 1/2 cup of tomato puree (120ml)
  • 1/4 cup of lemon juice (60ml)
  • 1 teaspoon of dried oregano (5ml)
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped (for garnish)

Greek-Style Marinated Mushrooms Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  2. Add the mushrooms and cook 8 minutes, until they soften and release their liquid.
  3. In a bowl, whisk the remaining olive oil with lemon juice, garlic, oregano, salt, and pepper.
  4. Add the warm mushrooms to the bowl and toss well so they absorb the marinade.
  5. Stir in parsley and any optional add-ins.
  6. Cover and refrigerate for at least 1 hour. Overnight is even better.
  7. Spoon some of the marinade over the top right before serving.
  8. Serve chilled or at room temperature.
