Cooking Steps

  1. Over medium heat, add canola oil to a saucepan.
  2. Add onion, celery, and carrots to the pan and mix.
  3. Prepare your chicken stock with hot water.
  4. In a jug combine 2 cups of water with the chicken stock.
  5. Add the mixture to the saucepan and bring to a boil.
  6. Add the thyme sprigs to the saucepan.
  7. Add the rotini to the saucepan and stir.
  8. Lower the temperature and let the soup simmer for 8-10 minutes.
  9. Add the chicken breast and thigh to the soup (pre-cooked chicken).
  10. Add salt, pepper, and mix the soup.
  11. Cook for 2-5 minutes, or until the pasta and carrots are to taste.
  12. Serve and garnish to taste with herbs, salt, and pepper.
