Ingredients (Serves 4)

  • 4 Chicken Breasts (Boneless and skinless)
  • 20 slices of Bacon (Do not use thick cut – about 4-5 slices per breast)

Glaze:

  • 1/4 cup Canola Oil
  • 1 tsp Garlic Powder
  • 1 tsp Smoked Paprika
  • 1/2 tsp Onion Powder
  • 1/4 tsp Cayenne Pepper
  • 1/4 tsp Black Pepper
  • 1/4 tsp Salt

Cheese Stuffing:

  • 8 ounces of Cream Cheese
  • 1 cup Cheddar Cheese (Shredded)
  • 1 Jalapeno (Seeded and finely diced)
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Dried Parsley

Garnish:

  • 1 tbls Chopped Parsley

Cooking Steps

  1. Preheat the oven to 375 degrees F.
  2. In a small bowl, mix together all the Glaze ingredients from above.
  3. In a medium bowl, mix together all the Cheese Stuffing ingredients from above.
  4. Lengthwise, cut a pocket into each chicken breast.
  5. Stuff each chicken breast with the cheese mixture, dividing equally.
  6. Wrap each chicken breast in 4-5 slices of bacon.
  7. Place the chicken breasts, seam side down in a lightly greased baking pan.
  8. Top with the glaze mixture.
  9. Bake for 25-30 minutes or until bacon is crispy and chicken is cooked through, basting the chicken occasionally with the pan drippings.
  10. If you prefer extra crispy bacon, broil for an additional 1-2 minutes.
  11. Sprinkle with parsley, then serve hot.
