Keto Arugula Salmon Roll: Recipes Worth Making

Ingredients (12 Slices)

  • 4 oz of Fresh Arugula
  • 1/4 cup of Pine Nuts
  • 2 tbsps of Olive Oil
  • Salt and Pepper (To taste)
  • 6 medium Eggs
  • 1/3 cup of Parmesan Cheese (Grated)
  • 16 oz of Cream Cheese (Room temperature)
  • 12 oz of Smoked Salmon (Sliced)

Cooking Steps

  1. Preheat the over to 350 F°.
  2. Add the arugula, pine nuts, and olive oil to a blender and blend until smooth.
  3. Season with salt and pepper.
  4. Add the eggs and Parmesan cheese, then blend until smooth.
  5. In a large pan, add parchment paper.
  6. Pour the mixture onto the parchment paper and bake for 15 minutes.
  7. Let it cool.
  8. Once cool, spread the cream cheese over it and add the slices of smoked salmon.
  9. Roll it up and refrigerate for about 60 minutes.
  10. Slice it and serve cold!
