Ingredients (Serves 4)

  • 4 boneless chicken breasts
  • Olive oil for grilling

Marinade:

  • 1/2 cup Extra Virgin Olive Oil
  • 1/3 cup Red Wine Vinegar
  • 2 tbsps fresh Lemon Juice
  • 1 tbsp Lemon Zest
  • 2 tbsps fresh Parsley Chopped
  • 1 tbsp fresh Minced Onion
  • 3 cloves fresh Minced Garlic
  • 1 tso dried Basil
  • 1/2 tso dried Oregano
  • 1/2 tsp Italian Herbs
  • 1/4 tso Red Pepper Flakes
  • 1 tbsp Sugar
  • 1/4 tso Salt (To taste)
  • 1/4 tsp Black Pepper (To taste)

Cooking Steps

  1. Combine all marinade ingredients in a large bowl or freezer bag.
  2. Pierce chicken breasts with a fork a few times, and place them into the marinade.
  3. Marinade for 30 minutes, or up to 4 hours before cooking.
  4. Preheat the grill to medium-high heat or place a cast-iron grill pan over medium-high heat. Brush it well with olive oil.
  5. Grill chicken on each side for 7-8 minutes or until no longer pink in the center and the chicken reaches 165°F.
  6. Rest for 5 minutes before slicing and serving.
